Cajun French Fries
2 pounds of russet potatoes cut into steak fries,1 cup of corn flour, 2 1/2 tablespoons yellow cornmeal, 2 tablespoons Cajun seasoning salt, 2 teaspoons cayenne and oil for frying.
Get out a large bowl. Soak the potatoes in cold water add enough water to cover the potatoes soak them for 10 15 minutes. Add the corn flour, cornmeal and seasoning salt to a gallon size plastic bag, shake it and mix everything together. Drain your potatoes but leave them wet cuz you need them wet place the fries place the potatoes in the plastic bag with the seasoning and shake it till the potatoes are thoroughly and completely coated. Now you going to take your oil and put it in a heavy skillet and heat the oil to approximately 375 degrees. Add the potatoes and fry them until they are golden brown. Remove from he skillet and drain on paper towels, lighty salt and toss.
