CRISPY AND CHEWY

CRISPY ON THE OUTSIDE AND CHEWY ON THE INSIDE

OATMEAL COOKIES

1 cup melted butter flavored shortening, 2 cups packed brown sugar, 2 eggs, 2 1/2 cups old-fashion oatmeal,  2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon vanilla extract, 1 cup craisins, 1 cup coarsely chopped pecans.

Dump everything into a bowl and mix together.  With a teaspoon scoop out a heaping spoon of cookie dough and drop onto the cookie sheet.  Bake at 425 degrees until the cookies brown.
