JACQUE ROSE COCONUT PEANUT BRITTLE
3 cups sugar, 3 teaspoons salted butter, 1 cup light corn syrup, 1 1/2 cups unsweetened coconut flakes, 3 cups raw peanuts, chopped, 1 tablespoon sea salt, 1 1/2 tablespoon vanilla extract, 3 tablespoon baking soda.
In a pot combine the sugar, water, syrup, and butter, bring to a boil. Add the peanuts and coconut. Stir with a wooden spoon until the sugar melts and it turns into a brownish gold. Stir frequently until the candy thermometer reaches 300 degrees. Remove from the heat, add the soda and salt. Smear a light coat of butter on a cookie sheet. Pour the candy onto the cookie sheet, spread into a thickness of 1/4 inch thickness. When the candy is completely cool break it into smaller pieces.
