
I am fixing GrandBaby cakes for breakfast. My grandchildren spent the night. They asked for pancakes this morning. I fixed their lunches and had a handful of Black Forest Ham left over.
Breakfast will be Black Forest Ham Pancakes their official name is GRANDBABY CAKES.
1 1/2 cups flour, 1/2 tablespoon sugar, 1 tablespoon baking powder, 1/4 teaspoon salt, 2 eggs, 1 1/4 cups milk, 3/4 teaspoon vanilla extract, 3 1/2 tablespoons unsalted butter and 1/2 tablespoons butter flavored shortening.
Take out the eggs and milk allow them to reach room temperature before you add them to the batter. Cut up the ham into bite-size pieces. In a bowl add the flour, sugar, baking powder, and salt. Whisk together and set aside. In another bowl add the eggs and beat them, now add the milk and vanilla. Add the liquid batter to the dry mix, mix well BUT make sure the batter is not completely smooth, keep a couple of lumps, the batter should be thick. The lumps ensure the batter will rise. Set aside. Get out a cast iron skillet, add some of the butter/shortening to the skillet, allow to melt. Add approximately 1/4 cup of the batter to the skillet. Cook until bubbles break to the surface of the pancakes, add the ham pieces, flip to the other side. Cook for another minute or two or until done. Serve immediately topped with butter and warm syrup.
