ALMOND BREAD

ALMOND BREAD

1 1/4 cup flour, sifted, 1 1/2 teaspoon baking powder, 1/8 teaspoon salt, 4 eggs, slightly beaten, 2 tablespoons lemon juice, 2 tablespoons butter flavored shortening, melted and cooled, ½ cup almonds, coarsely chopped, ¼ cup craisins, chopped

In a bowl, add all the dry ingredient.  In another bowl, beat the eggs and set aside.  Gradually add the sugar to the egg mixture, beat till smooth.  Slowly add dry ingredients, mix well.  Add lemon juice to shortening and mix until the consistency is smooth.  Fold in almonds and craisins.  Pour into a greased 8 x 8 pan and bake at 350 degrees for 30 to 35 minutes when done the bread will start to pull away from the sides of the pan.
