I had guest for breakfast yesterday, we had cantaloupe, sweet potato muffin pops, turkey bacon, spicy breakfast sausage, buttermilk biscuits, fried potatoes, and onions, over easy and scrambled eggs, strawberry jelly, molasses, orange juice, milk, tea, and coffee.
For lunch, I am going to make my special southern comfort bacon cheeseburger with a side of french fries and sweet tea. Here’s a list of everything we need to prepare four burgers.
1 pound 80/20 ground beef, generously season the meat with the following spices: kosher salt, black pepper, Worcestershire sauce, granulated garlic, and onion powder. Get out a bowl, dump the meat and the seasoning into the bowl and mix well. Do not overmix the meat, over mixing will cause your burger to be tough. Divide the meat into 4 equal parts. Shape the meat into 4 loose balls. Flatten out each ball into a patty about 1 inch thick and 4 inches round. Make a slight indention in the center of the patty with your thumb. Cook each patty, on medium heat for about 3-4 minutes on each side. Take the patty out the pan wrap 2 pieces of bacon around the outside of each patty, return to the pan. Flip one more time, continue to cook until the bacon is crisp. Add 1 slice of blue cheese and 1 slice of American cheese to each patty. Continue to cook on medium heat until the cheese melts.
Now it’s time to assemble and dress the burgers. I am using toasted potato rolls, tomatoes slices, romaine lettuce, mustard, mayonnaise, red onion slices and dill pickle slices.
