I KNOW IT’S NATIONAL PIE DAY, BUT A SOUTHERNER DOES NOT KNOW THE DIFFERENCE BETWEEN PIE AND COBBLER, PLUS THE BEST PART OF A PIE OR A COBBLER IS THE CRUST. COBBLER HAS MORE CRUST, SO THE COBBLER WON TODAY
1 cup sugar, 1 (16-ounce) package frozen strawberries, 3 tablespoons melted butter, 2 tablespoons cornstarch, 1 1/2 teaspoon fresh lemon juice, and 1/4 cup sugar. Pour everything into a lightly buttered casserole dish and mix well. In a bowl add 2 cups buttermilk baking mix, 1/4 cup melted butter, 1/3 cup evaporated milk, 1/3 cup warm water, 4 tablespoons sugar, mix well and pour on top of strawberry mixture. Bake at 400 degrees for 20 – 25 minutes or until the crust is golden brown.
