March 17th is also called “Eat like the Irish” Day. To this end, I am serving my rendition of an Irish Breakfast, which is sausage, black and white pudding, eggs, hash browns, beans, tomatoes, and mushrooms.
HOMEMADE IRISH BREAKFAST SAUSAGE
1 pound ground pork, 1 teaspoon chicken bouillon, 1/2 teaspoon granulated garlic, 1/2 teaspoon rubbed dried sage, 1/2 teaspoon black pepper, 1/2 teaspoon crushed red pepper flakes, 1/2 teaspoon ground coriander, 1/4 teaspoon onion powder, 1/4 teaspoon ground thyme. 1/4 teaspoon maple syrup, and 1/4 teaspoon ground nutmeg. Dump everything in a bowl, refrigerate for at least 8 hours to allow all the seasonings to marry.
When you are ready to cook, scoop out a heaping tablespoon, make a patty and fry on medium heat until done.
