Can you guess my two of my favorite vegetables? My two favorite vegetables are collard green and yams. I have combined the two to make a collard green and yam salad.

1 large orange yam, 1/4 cup garlic oil, 1/2 tablespoon ground cumin, 1/2 tablespoon dried thyme, 1 tablespoon maple syrup, 1/2 tablespoon salt, 1/4 tablespoon black pepper, 2 garlic cloves, minced, 1 tablespoon fresh lemon juice, 1 teaspoon fresh ginger, peeled and minced, 1 pound collard greens, stems removed, leaves rolled and sliced thin, thin, thin, 4 slices bacon, fried crispy and crumbled, 1/2 cup crumbled feta cheese, 1/4 cup pecans, roughly chopped.
Preheat the oven to 375 degrees. Get out a cup add the oil, cumin, thyme, garlic, syrup, salt, and pepper, mix well. Cut the yams into 1/2 inch chunks, dump the yams onto a cookie sheet, pour the garlic oil over the top of the yams. With your hands massage the oil into the yams. Put the yams in the oven and roast them for about 10 minutes flip them and roast another 10 minutes or until the yams are fork tender and slightly browned around the edges. While the yams are roasting, soak and wash the greens in salted water until they are clean. Remove the center stem and roll up the greens and cut them into VERY thin slices, put the sliced greens into a large salad bowl, sprinkle the green with salt. Using the same cup add the lemon juice, and ginger mix well. Pour the lemon juice and ginger over the greens. Toss the greens with the lemon and ginger dressing. Add the cooled yams, feta cheese, pecans and bacon bits on top.
