
Another delicious healthy day. Today I am preparing a Tomato Surprise Salad. 8 Roma tomatoes, 1/4 cup Persian cucumbers, diced, 1/2 cup cooked chicken, diced, 1/4 cup black walnuts, chopped, 1/4 cup mayonnaise and lettuce.
Scald and peel the tomatoes. Scoop out the tomato pulp, remove the seeds, refrigerate the tomato shells. Get out a bowl, add all the ingredients except the lettuce, mix well. Taste, add salt and pepper as needed. Remove the tomato shells from the refrigerator, fill the shell with the tomato pulp and serve on a bed of lettuce.
