BLACK WALNUT STUFFED JALAPENO PEPPERS

Black walnuts were used a lot in Native American recipes and as a healing agent. Black walnuts hulls, taken internally have been used as a home remedy to treat pinworms, ringworms, a laxative,  jock itch, and skin yeast infections.  A study in Phytotherapy Research found that juglone from black walnuts showed significant inhibition of RNase H activity in the treatment of the HIV virus. I think this makes black walnuts a superfood.   Black walnuts have a very dominate the bold taste.  Black walnuts are earthy tasting, bittersweet and thick.  Black walnuts are native to 15 states including Mississippi.

BLACK WALNUT STUFFED JALAPENO PEPPERS

½ pound fresh firm jalapeno peppers, 1 (8oz.) package cream cheese, softened,  1 (4 oz.) package of black walnuts, finely chopped.  Slice peppers lengthwise, remove seeds. Beat cream cheese until smooth, add the jalapeno seeds to the cream cheese and mix well.  Evenly spread the cream cheese to the jalapeno halves.  Sprinkle the chopped walnuts on top of cream cheese.  Chill for approximately 45 minutes. Serve.
