
My sister LaLa went peach picking a couple of weeks ago. Peach picking brings back such fond memories. As a family, we would go to Littlerock, California and pick lugs of peaches that would be used to prepare peach cobbler, peach syrup, peach preserve, and peach jelly.
4 large fresh peaches, 1/4 cup powdered sugar, 1/8 teaspoon allspice, 1 tablespoon cornstarch, 1 1/2 tablespoons salted butter, 1/4 cup cold water
Get out a heavy pot, add enough water to the pot, to cover the peaches bring to a boil, this takes about a minute or two. Remove the peaches, allow to cool, peel the peaches. Slice the peaches in half and remove the pits. Dump the peaches into a bowl and roughly mash with a potato masher. Pour out all but 1/4 cup of water out of the pot, add the peaches, sugar, and allspice. Bring to a rapid bowl. While the peaches are cooking, get out a bowl add the cornstarch and 1 tablespoon of water, whisk until smooth. Gradually add the cornstarch mixture to the peaches, stir together. Continue to stir until the peach mixture thickens.
Ways to serve your syrup
Pour over waffles, pancakes, ice cream, a slice of pound cake along with peach slices, add to your ice tea, add to a shot of bourbon
