RED-EYE GRAVY also known as BOTTOM SOP
Add a little shortening to a heavy skillet, fry ham steak (2-inches thick). In a skillet, fry the ham until it is a little crisp and browned. Remove the ham from the skillet. Add 1½ cup black boiling coffee, 1½ tablespoon flour, ½ teaspoon seasoning salt, ¼ teaspoon pepper, ¼ teaspoon brown sugar, ¼ teaspoon cayenne, 1 tablespoon butter, ¼ cup coke and whisk until smooth. Simmer for at least 5 minutes. Wha’la the best red-eyed gravy you have ever had.
