BANANA FOSTER PANCAKES

1 1/4 cups all-purpose flour, 2 teaspoon baking powder, 1/2 teaspoon salt, 1 egg, beaten, 1/4 cup butter, melted, 1 large egg, 1/3 cup heavy whipping cream, 1/4 cup caramelized banana mixture, 1/4 cup walnuts, chopped,  vanilla ice cream.

Caramelize the bananas:  2 tablespoons butter,  1/4 cup light brown sugar, 2 tablespoon molasses, 1/4 cup dark rum, 1/4 teaspoon rum extract, 2 firm bananas sliced into rounds.  Get out the skillet, add the butter and melt, when the butter melts add the sugar.  Cook on medium heat (300 degrees) until the mixture starts to bubble. Add molasses, extract, and bananas, mix well.  Be careful not to crush the bananas. Lower the heat, when the mixture starts to bubble again remove from the heat add the rum. Set aside.

Pancakes: Get out a bowl, add the dry ingredients, mix together with a whisk.  Make a well add the liquids (1/4 cup of the caramelized banana mixture) to the well and mix until all the dry ingredients are combined into the liquid, you will have some small lumps that’s okay.  Get out a grill or skillet, heat up the skillet, add 2 tablespoons of vegetable.  Add 1/2 cup of the pancake batter to the skillet, fy the pancake until you see it bubble in the center, flip and cook for another 1-2 minutes until the pancakes are a light golden brown on both sides.  Remove from the skillet and set aside.  Add at least 2 pancakes to a warm plate.  Top with a couple scoops of vanilla ice cream, the caramelized banana glaze and sprinkle with the walnuts.
