NEW POTATO SALAD

New potato salad is made with red skin potatoes has no mayonnaise is a little spicy and contains crispy bacon.  I think this was created from what was in the pantry.  Consider taking New  Potato Salad to the Labor Day gathering this weekend.

2 pounds red potatoes, 1 cup Italian salad dressing, 1/2 teaspoon smoked paprika, 3/4 teaspoon cayenne,  8 slices bacon, fried crispy, 3 green onions, chopped, 2 stalks celery, finely chopped, 1/8 cup red bell pepper, finely chopped.

Boil potatoes until fork tender.  Drain the potatoes, peel and roughly cube set aside in a large bowl to cool.  Add the salad dressing, paprika, and cayenne.  Fry bacon until crisp.  Crumble and set aside.  Reserve 1 tablespoon of bacon drippings in the skillet.  Add the onions, celery and bell pepper,  to the bacon drippings and sauté until the vegetables are crisp.   Add the vegetable mixture and crumbled bacon to the cooled potatoes mix well, try not to crumble the potatoes too much.  Always taste your food before serving, add salt, and pepper to taste and garnish with chopped green onions.  Refrigerate for at least 1 hour before serving.
