Here ya go Dot. I fix my turkey meatballs with chicken to ensure they are moist.
3/4 pound lean ground turkey, 1/4 pound ground dark chicken, 1/4 cup yellow onions, chopped, 1/8 cup celery chopped, 1/8 cup red bell pepper, chopped, 1/4 cup fresh parsley, chopped, 2 garlic cloves, minced, 1/2 teaspoon seasoning salt, 1/2 teaspoon ground oregano, 1/4 teaspoon black pepper, 1 teaspoon ground fennel seeds, 1 large egg, beaten, 1/8 cup chicken broth, 1/2 cup Italian crouton, crushed, oil for frying.
Preheat oven to 400 degrees. Get out a large bowl, dump everything into the bowl mix well with your hands. Shape into approximately 15-18 large meatballs. Get out your skillet, add approximately 1-2 inches of oil. Add the meatballs and fry until brown on all sides. Add the meatballs, 1-1/2 inches apart, to a non-stick baking sheet and bake for 15 minutes or until the balls are cooked through.
