
Chicken feet are a delicacy. They are very hard to find living on the west coast. If you can find them try them. Chicken feet have very little meat. If you like crunchy texture and delicious flavor, you will love deep fried chicken feet. Deep fried chicken feet is reminiscent to eating cracklins.
1-pound of chicken feet. The first thing we are going to do is clean them. Soak the feet in warm water, remove that yellow film, any dirt, callous, remove toenails and loose skin. remove the toenails. Wash the feet be sure to remove calluses and any loose skin. Get out a large pot, add the feet, chicken broth, and water, enough to cover the feet. Add garlic cloves, granulated garlic, seasoning salt, white pepper, sugar, and poultry seasoning. Bring to a boil, reduce to a simmer and cook for at least 1-hour or until the feet are tender. Remove from the stove, remove the feet and allow them to cool.
We are now going to make up an egg wash. WASH: eggs, salt, white pepper, poultry seasoning, and beer.
Make seasoned flour, 1/2 cup self-rising flour, 1/2 cup cornstarch, 1 tablespoon chicken bouillon, 1/2 tablespoon white pepper, and 1/2 tablespoon smoked paprika.
Get out a deep fryer. Add about 1-quart of oil, heat oil to 375-400 degrees. While the oil is getting hot, run the feet through the eggwash then coat them in the seasoned flour, shake off the excess flour. Drop the feet in the hot oil. Fry for approximately 4-5 minutes until the feet are golden brown. Remove from the pot, lightly sprinkle with seasoning salt and drain on a wire rack.
