Leftover Fried Chicken Thighs

You know I recently had chicken; I had three short thighs left over.  It’s time to repurpose, I am making chicken dip and taking it to a Thursday night football game potluck.  The Philadelphia Eagles are playing the New York Giants. Vegas has favorited the Eagles by 3-points.  I am picking the Giants plus 3.

CHICKEN DIP

3 fried chicken thighs, chopped, 6 pieces bacon, fried and crumbled, 1 cup cheddar cheese, shredded, 1/2 cup pepper jack cheese, shredded, 3 green onions, sliced, 1 celery stalk, finely chopped, 1/2 cup sour cream, 1/2 cup mayonnaise,  1 (0.4 oz.) package ranch dressing and seasoning mix. Get out a bowl, add everything to the bowl, mix well.  Refrigerate overnight and take to the potluck the next day.  Serve with crackers, corn chips, and pretzels.
