Southern fried cabbage is one of my favorite sides dishes. The perfect meal is neckbones, rice and gravy, baked yams, fried cabbage, and cornbread.
FRIED CABBAGE
1/4 pound bacon ends, 1/2 cup white onion, chopped, 2 garlic cloves, minced, 5 cups green cabbage, cored and sliced, 1/4 cup shredded carrots, 1 teaspoon seasoning salt, 1/2 teaspoon black pepper.
Get out a heavy skillet. Add the bacon to the skillet and fry until crisp. Add the onions cook until translucent, add the garlic. Turn the flame down to a simmer add the salt, and pepper stir. Add the cabbage and carrots, mix well, cover the pot and cook for about 15 minutes or until the cabbage starts to wilt. Remove from the stove and serve.
