Meatloaf is a traditional German dish. At my house meatloaf was considered comfort food; that was served a couple times a month then made into sandwiches the next couple of day. Bacon wrapped meatloaf was frequently served with baked potatoes, green beans, and a simple green salad.
Tonight we are going to have meatloaf while watching Monday night football. The New Orleans Saints and the Carolina Panthers are playing. Las Vegas favors the Saints by 6 points. I think the Saints will win the game, I do not think they will beat the point spread. Wo do you think is going to win this game?
4 pieces of stale bread, ½ cup yellow onions, finely chopped, ¼ cup bell pepper, finely chopped, 1 celery stalk, finely chopped, 2 pounds ground chuck or ground turkey, 2 eggs, beaten, 1 tablespoon flour, 1 (10 ¾ oz.) can cream of mushroom soup, 1/4 cup ketchup, 1 tablespoon poultry seasoning, 1 teaspoon dried thyme, 1 tablespoon beef bouillon, 1 teaspoon black pepper, 2 1/2 teaspoons minced garlic, 1 tablespoon Worcestershire sauce, 1 package dry onion soup mix, 10 pieces of thick bacon.
Pour a couple of teaspoons of milk in a bowl, add bread allow to soak then crumble the bread into the meat. Stir in the rest of the ingredients. Mix well. Form meat mixture into a loaf shape in the baking dish. Place the bacon slices on top of the loaf, be sure to tuck the end pieces underneath the loaf. Pour half the sauce over the loaf and bake at 350 degrees for 1 hour 30 minutes. Pour the remaining sauce over the meat the last 15 minutes.
Meatloaf Sauce: ½ cup catsup, ½ tablespoons mustard, 1 tablespoon dry spaghetti mix, ¼ cup brown sugar mix with a whisk until there are no lumps. Set aside.
