cheese bagel

These pizzas are quick and delicious, and my grandchildren love them.  If you are interested in being the best grandma in the kitchen y’all should make these pizzas.


6 cheddar cheese jalapeno bagels, cut in half lengthwise and lightly toasted, 1 small red onion, sliced into rings, 2 medium zucchini, thinly sliced, 2 firm heirloom tomatoes, thinly sliced, 1 portabella mushrooms, thickly sliced, 1 cup Fontina cheese coarsely grated, 1/2 cup Parmesan cheese finely grated, 1 cup mozzarella cheese, coarsely grated, 1/4 cup purchased spicy marinara sauce, 3 tablespoons purchased pesto sauce, 1 tablespoon minced garlic, 1 1/4 teaspoon Italian seasoning, 1/4 cup arugula, thinly sliced

Preheat the oven to 400 degrees.  Get out a bowl add the marinara, pesto, and Italian seasoning to the bowl, mix well, set aside.  Get the toasted bagels put them on a cookie sheet.  Firmly press the minced garlic on the bottom of each bagel. Spoon a light coating of the marinara mixture on each bagel.  Sprinkle the cheeses on each bagel, then the onions, zucchini, tomatoes, and mushrooms.  Bake until the cheese is melted and bubbly.  Remove from the oven and lightly sprinkle the arugula on top.
