POTATO PANCAKES
4 large russet potatoes, peeled, grated and drained, 3/4 cup white onion, grated, 1 teaspoon Cajun seasoning salt, 1/4 teaspoon black pepper, 1/4 teaspoon minced garlic, 2 eggs, beaten, 5 tablespoons self-rising flour, 1/4 teaspoon baking powder, peanut oil for frying. Garnish with a sprinkle of chopped green onions. Some people also garnish with applesauce and sour cream, I don’t, but if you like it a little sweet try it.
Get out a large bowl, add the potatoes, onions, salt, pepper, garlic, eggs, flour, and baking powder, mix well until smooth. Get out a heavy skillet, add the oil, bring to a high heat approximately 300-350 degrees. While the oil is heating up scoop up a heaping tablespoon of the potato mixture flatten out to a cake and drop into the skillet. Fry until golden brown and crispy on both sides. Remove from the skillet, and serve with a light sprinkling of chopped green onions.
