In the last twelve months, I have gained 20-pounds. For the last two months, I have been talking about how I am going to lose and keep the weight off. Today I am through talking about it I am starting my weight loss program. I currently weigh 198 pounds. I am 5′ 9″. My ideal weight is 175 pounds.
I am going on a “Ketogenic Diet”. The basic premise of this plan is high-fat, adequate protein and low carbohydrate. This diet plan forces your body to burn fat rather than carbohydrates.
I am going back to all the old recipes I have posted and make them keto friendly plates and servings. The amount of fat in this diet will minimize your carbohydrate craving and give you energy while suppressing that feeling of hunger.
I am posting an old recipe, shrimp and grits. The difference is instead of yellow grits I am serving cheesy cauliflower grits. The meal is shrimp and cheesy cauliflower grits, tomato, cucumber, and red onion salad with a vinaigrette dressing and lots of water.
This is my first dish on my Keto Diet. I will post a Keto dish once a week.
CHEESY CAULIFLOWER GRITS
1 teaspoon bacon drippings, 3 cups riced cauliflower, 1/4 cup shrimp stock, 1/4 cup heavy whipping cream, 1/4 teaspoon salt, 1/4 teaspoon white pepper, 1/4 cup garlic gouda cheese, grated.
Get out a heavy saucepan, add the bacon drippings. When the drippings have melted add the cauliflower and the shrimp broth. Cook on high heat for about 5-minutes stirring constantly with a fork. Using a fork ensures you break up large pieced of cauliflower. Add the whipping cream, salt, and white pepper. Continue to cook until the cauliflower takes on a grit like consistency. Remove the saucepan from the heat, add the cheese, stir until the cheese has melted.
