4 pounds of turkey wings, 3 1/2 tablespoons extra virgin olive oil, 1 teaspoon Cajun seasoning salt, 1/2 teaspoon white pepper, 1 1/4 teaspoon baking powder, 3 1/2 teaspoons granulated garlic, 1 teaspoon smoked paprika, 2 red delicious apples, 2 stalks celery, 1/2 cup white onion.

Preheat oven to 425 degrees.  Wash the wings make sure you remove any feathers.  Sprinkle and rub 2 1/2 tablespoons of the oil on the wings.  In a bowl add all the dry seasonings, mix well.  Sprinkle the seasonings on both sides of the wings.  Set aside for 10-15 minutes. Pour the remaining oil on a cookie sheet place the wings on the sheet, do not crowd (you may need more that one cookie sheet).  Slice the celery, onions, and apples place them on top of the wings. Bake for about 70-minutes or to the crispness you desire.  Turn off the oven, do not open the door, leave the wings in the oven for approximately 10-12 minutes.  Remove from the oven and serve.
