GRANDMA OATMEAL CAKE

CAKE:  1 cup quick oatmeal, 1/2 cup boiling water, 1 stick salted butter, softened, 1/2 teaspoon vanilla extract,  1/4 teaspoon almond extract, 1 cup brown sugar, packed, 1 cup sugar, 2 eggs, beaten, 1 teaspoon ground cinnamon,  3/4 teaspoon ground mace, 1 teaspoon baking soda, 1/8 teaspoon salt, 1 1/2 cup cake flour.

Preheat oven to 350 degrees.  Get out 8 x 12 pan, lightly grease and flour the baking pan, set aside. Get out a bowl, add the oatmeal, butter, and boiling water, mix well, set aside.  Get out another bowl, add the sugars and eggs, fold together.  Add the oatmeal mixture to the sugar and eggs., mix well.  Add the flour, cinnamon, mace, and salt, mix well.  Pour the oatmeal mixture into the baking pan.  Bake for 30 minutes or until a case knife inserted in the center comes out clean.

TOPPING:  2/3 cup brown sugar, packed, 1 stick salted butter, 3 tablespoons evaporated milk, 1 cup coconut flakes, 3/4 cup pecans, roughly chopped.  Get out a bowl, add sugar and butter, cream with an electric mixer.  Add the milk, coconut, and pecans, mix well, set aside.  When the cake come out the oven pour the topping over the hot cake.

  1. That’s one of the strangest cakes I’ve ever seen. I’ve had oatmeal cookies. Never oatmeal cake!
