RICE PUDDING

I am declaring today, National Comfort Dessert Food Day.

RICE PUDDING

2 cups cooked long grain rice, 2 cups condensed sweetened milk, 1 egg beaten, 1/4 teaspoon salt, 3 tablespoon butter, 2 teaspoons vanilla extract, 1/4 cup toasted coconut flakes, 1/4 cup raisins.

In a bowl soak the raisins in the milk for at least 10 minutes.  In a heavy pot, dump the rice, egg, salt, butter, and milk.  Cook on medium heat for approximately 20 minutes or until the rice mixture thickens to a pudding consistency.  Remove from the heat pour into an aluminum pan, add the extract, raisins, and coconut, mix well. Set aside, as everything marries the consistency will continue to thicken.   When you are ready to serve, make individual dishes, lightly sprinkle ground cinnamon and poke a cinnamon stick on top.
