Soul food is my alternate word for Good Food. I’m a foodie and I love to entertain.  Cooking is the art form that allows me to passionately express myself.  Preparing meals for others makes me happy because it is how I welcome people into my home and my heart.  Cooking is another way that I hug,  kiss, and express my love. I LOVE YOU.

SOUL FOOD SALMON ROLL

8 plain bagels, 3 minced garlic cloves, 2 teaspoons Italian seasoning, 1/2 cup freshly grated Parmesan cheese, 1 (1 lb.)  package honey smoked salmon,  1 bunch fresh dill weed, 2 (8 oz.) packages cream cheese with chives and onions, 1 (4 oz.) jar wild non-pareil capers, 3 sliced heirloom tomatoes and 1 red onion thinly sliced for garnish.

Preheat oven to 350 degrees. Slice each bagel into 3-rounds each, set aside. In a bowl mix the garlic, Italian seasoning, and cheese mix well. Arrange the bagel slices on a cookie sheet and sprinkle the cheese mixture on top of the chips. Bake for approximately 5 minutes or until the cheese melts, whichever comes first. Remove from the oven allow to cool.  Drain the capers and roughly chop.  In a bowl combine the cream cheese, and capers, mix well, set aside. Spread the cream cheese mixture on top of each bagel slice. Add a tomato slice then the salmon and another onion slice and a sprig of dill weed.
