hobo casserole


When Thursday gets here, you are probably tired of rushing home and preparing dinner, if that’s the case. Here is my grandmother’s Hobo Casserole.  Dinner is ready in 20-minutes.


1 pound lean ground beef, 1/2 cup white onion, chopped, 1/4 cup green bell pepper, chopped, 1/2 cup frozen broccoli spears, roughly chopped, 1 cup frozen whole kernel corn, 1 (8 oz.) can diced tomatoes, 1/2 pound noodles, whatever kind you like, enough crackers crumbs to cover the top of your dish, 1 1/2 pound sharp cheddar cheese.

Cook the noodles according to the package direction, drain and set aside. Preheat the oven to 350 degrees.  Get out a skillet add the ground beef, brown the meat.  Add the onions, bell pepper, broccoli, corn, and diced tomatoes, simmer for about 10-minutes.  Add salt and pepper to taste.  Lightly grease a foil pan, Layer the noodles, meat mixture, cheese top with the cracker crumbs then the last layer of cheese.  Bake until the cheese is melted and bubbly.
