Tortillas origin is Mexico.  Flour tortillas are unleavened flatbread originally made by the Aztecs.  Tortillas date back before Jesus. Ray Gonzalez, has written a poem honoring the tortilla.  Please take a moment to read “Praise the Tortilla.”

For those of you that on the Keto train with me, use lettuce or greens instead of a tortilla.  I recommend using these lettuces iceberg, romaine, butter, or kale, mustard, and greens.

VEGGIE WRAP

3  (12-inch) flour tortillas, 3 tablespoons refried beans (from a can of beans), 2 1/2 tablespoons sour cream,  1 cup baby spinach, 1/2 cup shredded sharp cheddar cheese, 1/2 cup peeled and chopped Persian cucumbers,  1/4 cup chopped black olives, 1/2 cup sliced red onions, 1/4 cup chopped cilantro, 1 large avocado thinly sliced,  2 tablespoons chopped fresh jalapeno peppers, 2 tablespoons chopped walnuts.

Spread the cream cheese and refried beans on the tortilla.  Layer the ingredients in the order listed above down the center of the tortilla.  Wrap and fold the filled tortilla. Serve with a hot cup of your favorite soup. Time to eat!
