OLE FASHION POUND CAKE

This is an old staple recipe, it’s the first cake I ever made. My great grandmother Elvira taught me how to make this cake.  No mixer we used a wooden spoon and it was cooked in a wood stove.  This is not a picture of the cake we made that day, it’s a picture of a slice of cake using her recipe an electric mixer, eggs from the store cooked in a gas oven.

2 cups butter, softened, 4 ¼ cups cake flour, 10 eggs (fresh out the chicken coop), 2 cups sugar, 1 ½ tsp. vanilla extract, ½ tsp. lemon extract.

Cream butter, until it is fluffy.  Gradually add flour until mixture is mealy.  In a separate bowl, beat the eggs, then add the sugar, and flavorings until fluffy. Add the egg mixture to the butter and flour mixture together until smooth.  The consistency will be very thick so you are going to take a case knife and cut stripes through the mixture.   Pour it all into a greased pound cake pan.  Bake at 350 degrees for approximately 70 to 75 minutes.
