Get out a heavy bottom pot.  Add 1 cup white long-grain rice.  Wash the rice to get off some of the starch.  The water will look cloudy. Put your pointer finger on top of the rice, add water until it reaches the first joint of your pointer finger. Bring to a rapid boil or until the water level is just below the surface of the rice, this step takes 3-5 minutes.  Reduce the heat to the lowest eye and simmer for 15-17 minutes.  Remove from the heat, do not remove the lid for at least 10-minutes. Remove lid and fluff the rice with a fork.
