WHAT ARE YOU SERVING WHEN YOU WATCH THE GAMES TODAY? I’M SERVING EASY, PEASY, DELICIOUS CHEESE BALLS
When I say easy, peasy and delicious, I mean just that. I am serving sharp cheddar and goat cheese balls accompanied by toasted baguette, almonds, slices of green apples, dried apricots, salami, sauteed shrimp, and chilled pink champagne.
CHEESE BALL
2 (8 oz.) packages softened cream cheese, 5 ounces asiago cheese, 5 ounces goat cheese, 2 ounces Velveeta cheese, 1/2 teaspoon fresh lime juice, 1/4 teaspoon Worcestershire sauce, 1/4 cup chopped white onions, 3 teaspoon Cajun seasoning salt, 1/4 teaspoon black pepper, 1/4 cup finely chopped parsley, 1/2 cup chopped pecans
In a large bowl add the cream cheese, Velveeta, asiago and goat cheese, parsley, lime juice, Worcestershire sauce, salt, and pepper. Beat with a hand mixer until mixed well and smooth. Taste, adjust seasonings if needed. Shape into a ball, wrap in plastic wrap and refrigerate until firm. It takes about an hour for the cheese to firm up. Remove from the refrigerator, roll the ball in the pecans, and serve.
