SPINACH CASSEROLE

This a quick and easy side dish that pairs well with a grilled ribeye steak and a loaded baked potato

2 (10 oz.) packages frozen spinach, 2 eggs, beaten,  1-pint cottage cheese, 1/2 cup Parmesan cheese, 1 teaspoon salt, 1/4 teaspoon cracked black pepper, 1 teaspoon minced garlic.

Preheat oven to 350 degrees.  Cook the spinach according to the package directions, drain well and set aside.  Get out bowl add the eggs, cottage cheese, salt, pepper, and garlic, mix well.  Add the spinach mix until well blended.  Lightly grease a casserole dish, pour the spinach mixture into the casserole dish. Evenly sprinkle the cheese on top. Bake for approximately 15-20 minutes or until the cheese is bubbly.
