FLANNEL CAKE
2 cups cake flour, sifted, 1 teaspoon salt, 3 teaspoons baking powder, 2 eggs, separated, 2 cups milk, 1 tablespoon shortening, melted.
Sift the flour at least 2 times. Get out a bowl, measure the flour and add to the bowl along with the salt. Get out another bowl, add the egg yolks and beat, add the milk, baking powder, and shortening, mix well on low with an electric mixer, add to the flour mixture, set aside. Get out another bowl, add the egg whites beat until they are stiff and start to perk, fold into the batter.
Pour 1/2 cup of the batter into a glass liquid measuring cup. Get out a deep fryer, add oil and heat to 375 degrees. Hold the measuring cup spout a couple of inches above the oil. Add the batter in a spiral motion until all the batter is in the oil. Fry until golden brown, remove and drain on a paper towel. Dust with powdered sugar. You might want to consider adding slices of your favorite fruit.
