CAJUN FRENCH FRIES

2 pounds of russet potatoes, 1 cup of cornflour, 2 1/2 tablespoons yellow cornmeal, 2 tablespoons Cajun seasoning salt, 2 teaspoons cayenne and oil for frying.

Wash and cut the potatoes into a fry size.  Get out a large bowl, add cold water. Soak the potatoes in the cold water for 10-minutes. Add the cornflour, cornmeal, and seasoning salt to a gallon-size plastic bag, shake it, and mix everything together.   Drain your potatoes. Dump the wet potatoes into the plastic bag with the seasoning and shake till the potatoes are wholly and thoroughly coated.  Now you going to pour 2-3 inches of oil into a heavy skillet. When the oil reaches 375 degrees add the potatoes, fry until they are lightly browned and crispy. Remove from the oil and drain on a wire rack, lightly sprinkle with sea salt.
