banana nut bread


2 1/2 cups cake flour, sifted 2 times, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 3/4 teaspoon salt, 1 1/2 cups or 3 small very ripe bananas, mashed, 1/3 cup orange juice, 2 teaspoons vanilla extract, 1 cup sugar, 1/4 cup light brown sugar, 1/2 cup unsalted butter, 2 large eggs, beaten, 2 1/2 cups walnuts, chopped.

Preheat oven to 350 degrees.  Lightly grease a 9-inch x 5-inch loaf pan, set aside. Get out a bowl, add the butter and sugar.  Cream until well blended smooth and fluffy.  Add eggs and mix. Get out a cup, add 2 tablespoons of boiling water and the baking soda, stir until the soda is completely dissolved, add to the creamed butter. Get out another bowl, add the dry ingredients, mix well.  Alternately add the wet and dry ingredients to the creamed butter, mix well after each addition.  Starting and ending with dry. Add the mashed bananas, and half of the nuts fold into the batter. Pour the batter into the loaf pan.  Sprinkle the remaining nuts on top. Bake for 60-65 minutes or until the bread starts to pull away from the pan.  Inserted a butter knife into the center of the bread if it comes out clean the bread is done. If not, bake for another 5-minutes, then check again. Remove from the oven allow to cool in the pan for about 5-minutes, then turn out and cool on a wire rack.
