WHAT’S A RUTABAGA?

What is a rutabaga?  Turnip roots are rutabagas.  Root vegetables are high in nutrition and low in calories.  The leafy green top of the turnip is edible, but that’s another post.  I found these beautiful turnips at a Farmers Market.

Rutabaga FuFu Twist

2 pounds turnip roots, 1 tablespoons bacon fat, 2 tablespoons butter, 1 teaspoon salt,  2 tablespoons raw honey, garnish with chopped flat-leaf parsley.

Peel turnips, thinly slice.  Get out a heavy skillet, add the bacon fat and butter. Cook the turnip roots for 1-2 minutes on each side or until tender. Season with salt.  Drizzle with honey and garnish with parsley.
