spam rice


2 1/2 cups jasmine rice cooked, 2 large eggs, beaten, 2 cloves garlic, minced, 6 ounces Spam, diced, 1/2 cup whole kernel frozen corn, 1/2 cup frozen peas, 1/4 cup frozen green beans,1/4 cup fresh white mushrooms, sliced, 3 tablespoons frozen diced carrots, 1 1/2 tablespoons soy sauce, 1/2 tablespoon fish sauce, 1/4 teaspoon sesame oil, 1/4 teaspoon white pepper, 8 slices bacon, fried and crumbled, 2 green onions, sliced.

Get out a skillet, add the bacon and fry till crispy, remove from the skillet. Drain on paper towels, when cool crumble, set aside.  Add the eggs and scramble, remove the eggs from the skillet and set aside.  Add the spam to the skillet and fry until crispy around the edges and lightly browned. Thaw the frozen vegetables, add the garlic, corn, peas, green beans, and carrots.  Cook, constantly stirring, until vegetables are tender, which takes about 2 minutes.  Add the rice, soy sauce, fish sauce, sesame oil, and pepper. Cook until the rice is heated.  Add the bacon, green onions, and scrambled eggs mix well. Serve hot.
