DABOO BRUSCHETTA

Bruschetta pronounced (bru’sketta) is an appetizer from Italy.  Bruschetta usually consists of grilled bread rubbed with garlic and topped with olive oil and salt.  My daughter made these two delicious bruschettas, hence the name.

DABOO BRUSCHETTA

2 French baguette. Slice the bread diagonally into 1/2 inch pieces.  Brush each slice, on one side, with olive oil and toast in the oven until lightly brown.  Top evenly with the following.

PESTO BRUSCHETTA

1 pound Roma tomatoes, seeded and thinly sliced, 1/4 cup thinly sliced red onions, fresh shaved Parmesan set aside.  In a bowl mix   1/2 tablespoon balsamic vinegar, 1 tablespoon Uno oil, 1/4 teaspoon seasoning salt, 1/4 teaspoon pepper, 1/4 teaspoon granulated garlic.  2 tablespoons pesto and 2 tablespoons capers, drained.  Assemble:  Spread the Uno oil mixture on the toasted bread.   Liberally spread the pesto.  Add a slice of tomato, a slice of onion, capers, and Parmesan.

SALAMI BRUSCHETTA

20 arugula leaves, 2 large sliced avocados, 20 slices hard salami. In a bowl mix   1/2 tablespoon balsamic vinegar, 1 tablespoon Uno oil, 1/4 teaspoon seasoning salt, 1/4 teaspoon pepper, 1/4 teaspoon granulated garlic. Assemble:  Spread the Uno oil mixture on the toasted bread. Layer arugula, avocado, salami.
