We are all hunkered down at home, wondering what’s for dinner.  Try something new, try my grandmother’s Hobo Casserole.  Dinner is ready in 20-minutes.


1 pound lean ground beef, 1/2 cup white onion, chopped, 1/4 cup green bell pepper, chopped, 1/2 cup frozen broccoli spears, roughly chopped, 1 cup frozen whole kernel corn, 1 (8 oz.) can diced tomatoes, 1/2 pound noodles, 1 1/2 pound sharp cheddar cheese, enough crackers crumbs to cover the top of your dish,

Cook the noodles according to the package direction, drain and set aside. Preheat the oven to 350 degrees.  Get out a skillet add the ground beef, brown the meat.  Add the onions, bell pepper, broccoli, corn, and diced tomatoes, simmer for about 10-minutes.  Add salt and pepper to taste.  Lightly grease a foil pan, layer the noodles, meat mixture, cheese top with the cracker crumbs, then the last layer of cheese.  Bake until the crackers are toasted.
