I grilled seven (7) chicken breast, I had four (4) leftover. Today, the question going around in my head is “what am I gonna do with this leftover chicken.”?
3 cups cooked chicken, chopped, 2 celery rib, finely chopped, 1/4 cup green apple, peeled and finely chopped, 2 boiled eggs, chopped, 4 tablespoons red onions, finely chopped, 2 1/2 tablespoons dill pickle relish, 1/2 cup walnuts, roughly chopped, 3/4 cup mayonnaise, 1/2 teaspoon seasoning salt, 1/4 teaspoon white pepper
Dump everything into a bowl, mix well. Taste, serve on a toasted croissant bun, or on a crispy lettuce leaf.
