Add a little shortening to a heavy skillet, fry your ham steak (2-inches thick) until it is crispy around the edges and browned. Remove the ham from the skillet. Add 1 1/2 cup black boiling coffee, scrape the skillet bottom, there are excellent flavors in those scrapes, 1 1/2 tablespoon flour, 1/2 teaspoon seasoning salt, 1/4 teaspoon black pepper, 1/4 teaspoon brown sugar, 1/4 teaspoon cayenne, 1 tablespoon butter, 1/4 cup coke and whisk until smooth. Taste, add salt and pepper if needed. Simmer for at least 5-7 minutes. Wha’la the best red-eyed gravy you have ever had.
