Thanksgiving Leftovers and Wednesday Nite Football. 

MACARONI AND CHEESE BALLS

This week I am repurposing Thanksgiving Dinner leftovers. Today I am serving Macaroni and Cheese Balls.

Get out that pan of leftover mac and cheese.  Hopefully, you have 2-cups.  Add to a bowl breakup; add 1/8 cup evaporated milk and 3 tablespoons of white truffle oil; mix well.  Get out a small ice cream scooper, fill with the macaroni, roll in bread crumbs, set on a cookie sheet.  Refrigerate for 30-minutes. Get out a dutch oven, add 3 1/2 inches of peanut oil.  When the oil gets hot, drop the balls; do not overcrowd.  Fry until golden brown.

  1. These look delicious and totally something my mom would do. She often took leftovers, rolled them into little balls, and deep friend them. No one ever complained about leftovers…
