
FUNNEL CAKE
1 cup buttermilk pancake mix, 1/4 teaspoon baking soda, 1/8 cup sugar, 1/4 cup ice-cold water, 1 egg, beaten, 1 teaspoon vanilla extract, 1 teaspoon maple syrup, oil for frying, and powdered sugar for dusting.
Get out a cup, add the egg and beat, set aside. Get out a bowl, add the water, egg, sugar, syrup, and vanilla extract, mix well with a whisk. Add the pancake mix and baking soda whisk until everything is blended and smooth.
Pour the batter into a squeeze bottle. Get out your deep fryer, add the oil, and heat to 360-375 degrees. Hold the squeeze bottle spout a couple of inches above the oil. Squeeze the batter in a spiral motion into the hot oil. Fry for about 45-seconds to 1-minute or until the batter is golden brown. Flip and fry on the other side until golden brown. Remove from the oil and drain on a paper towel. Dust with powdered sugar, serve warm.
