CRISPY BAKED TURKEY WINGS

Merry Christmas Eve.  Jesus is the reason for the season I will rejoice and be glad in it. All of our family gatherings will probably be much smaller this year due to the pandemic. I will not let that take the joy out of the Christmas celebrations, but I am going to consider a smaller, more intimate meal.  What do you think about baked turkey wings, steamed rice, giblet gravy, glazed carrots, fried cabbage, and a simple salad?

CRISPY BAKED TURKEY WINGS

4 pounds of turkey wings, 3 1/2 tablespoons extra virgin olive oil, 1 teaspoon Cajun seasoning salt, 1/2 teaspoon white pepper, 1 1/4 teaspoon baking powder, 3 1/2 teaspoons granulated garlic, 1 teaspoon smoked paprika, 2 red delicious apples, 2 stalks celery, 1/2 cup white onion.

Preheat oven to 425 degrees.  Wash the wings make sure you remove any feathers.  Sprinkle and rub 2 1/2 tablespoons of the oil on the wings.  In a bowl, add all the dry seasonings, mix well.  Sprinkle the seasonings on both sides of the wings.  Set aside for 10-15 minutes. Pour the remaining oil on a cookie sheet, place the wings on the sheet, do not crowd (you may need more than one cookie sheet).  Slice the celery, onions, and apples place them on top of the wings. Bake for about 30-minutes, turn over, and bake another 20-25 minutes or to the crispness you desire.  Turn off the oven, do not open the door, leave the wings in the oven for approximately 10-12 minutes.  Remove from the oven and serve.
