WOULD YOU LIKE SOME CAKE WITH YOUR COFFEE?

OATMEAL COFFEE CAKE

1 cup quick oatmeal, 1/2 cup boiling water, 1 stick salted butter, softened, 1/2 teaspoon vanilla extract,  1/4 teaspoon almond extract, 1 cup brown sugar, packed, 1 cup white sugar, 2 eggs, beaten, 1 teaspoon ground cinnamon,  3/4 teaspoon ground mace, 1 teaspoon baking soda, 1/8 teaspoon salt, 1 1/2 cups cake flour.

Preheat oven to 350 degrees.  Get out 8 x 12 baking pan, lightly grease and flour the pan, set aside. Get out a bowl, add the oatmeal, butter, and boiling water, mix well, set aside.  Get out another bowl, combine the sugars and eggs, mix well.  Add the oatmeal mixture to the sugar and eggs, mix well.  Add the flour, cinnamon, mace, and salt, mix well with a hand mixer.  Pour the oatmeal mixture into the pan.  Bake for 30 minutes or until a case knife inserted in the center comes out clean.

TOPPING

2/3 cup brown sugar, packed, 1 stick salted butter, 3 tablespoons evaporated milk, 1 cup coconut flakes, 3/4 cup pecans, roughly chopped.  Get out a bowl, add the sugar and butter, cream with a hand mixer until smooth and fluffy.  Add the milk, coconut, and pecans, mix well, set aside.  When the cake cools, add the topping.
