Valentine’s Day Salad: 1 cup baby spinach, 1 cup arugula, 2 cups baby salad greens, 1 green onion, chopped, 7 fresh strawberries, hulled and sliced, 8 fresh raspberries, cut in half, 1 navel orange, peeled and cut into bite-sized pieces, 12 blueberries, 1/4 cup craisins, 1/2 cup feta cheese, crumbled, 1/2 cup pine nuts, 1 avocado, peeled and cut into cubes, 1/2 cup seasoned sourdough croutons, 1/4 cup mayonnaise for the dressing.
Valentines Day is the perfect for a new cocktail to celebrate new friendships, new love, old love, engagements, wedded bliss, new life, new business, and just cause!
Cocktail: 2 parts Dibon Cava Brut, 2 ounces pomegranate juice, 1 Asian pear, 2 dashes Angostura bitters. Peel the pear, add to the food processor until smooth. Pour into a glass with the bitters and juice. Mix well. Add the champagne and 4 ice cubes. Shake until cold. Strain and pour into 2-champagne flutes and serve.
