HAM LOAF

For all intent and purposes, this is a twist on meatloaf with pineapples and cherries on top.

1 pound ground ham, 1 1/2 pounds ground veal, 2 eggs, beaten, 1 1/2 cup bread crumbs, 1 cup heavy whipping cream, 1 1/2 teaspoon seasoning salt, 1/2 teaspoon black pepper, 1 teaspoon granulated garlic, 1/2 cup white onions, chopped, 8 pineapple slices, 8 Maraschino cherries.

Preheat oven to 400 degrees.  Get out a large bowl,  add the cream and the breadcrumbs.  When the crumbs soak up the cream, mash them together until they are a smooth consistency.  Add all the other ingredients, except the pineapple slices and cherries, mix well.  Dump half of the ham mixture into a baking dish.  Add 4 pineapple slices and cherries in each pineapple center.  Pour the rest of the ham mixture on top.  Add the remaining pineapple slices.  Put a cherry in the center of each pineapple slice.  Bake covered for 35 minutes.  Remove from the oven, pour 1/2 of the glaze on top.  Return to the oven, bake for another 30-minutes, remove from the oven pour the rest of the glaze on top.  Turn the temperature to broil for about 5-minutes or until the topping is bubbly and golden brown.

GLAZE:  3/4 cup dark brown sugar, 2 teaspoons dry mustard, 2 tablespoons white vinegar, 2 tablespoons chicken broth. Get out a saucepan, add all the ingredients, bring to a boil, reduce to a simmer and cook until the sugar is dissolved and the glaze thickens.  Cook for another 3-5 minutes, remove from the heat, and set aside.
