My grandson Robert is an over-easy or over-medium egg eater.  He has asked how is it I never break the yolk when I fix his eggs?  Here’s the secret!

1 egg, a non-stick skillet, butter-flavored cooking spray, 2 tablespoons water, and a couple of salt and pepper shakes.

Spray the skillet with the cooking spray.  Heat the skillet to medium.  Crack the egg and gently slide it into the skillet.  The white will settle, add the salt and pepper at that time.  Now add the water. Put a lid on the skillet, glass if you have one, turn the flame up one notch.  When the yolks are completely covered by white, the eggs are done.  Remove the lid and slide the perfectly cooked, over-easy egg onto your plate.
