BLACKENED CHICKEN SANDWICH

Blackened seasoning recipe: get out a bowl, add 3 tablespoons smoked paprika, 2 tablespoons granulated garlic, 2 tablespoons granulated onion, 1 teaspoon pink salt, 1 teaspoon black pepper, 1 1/4 teaspoon dried thyme, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon dark brown sugar, and 1 1/2 teaspoon cayenne pepper.  Mix well.

2 whole boneless, skinless chicken breast.  Evenly slice into +4 equal fillets. Lightly sprinkle each piece with olive oil. Toss the chicken in the seasoning.  Make sure the chicken is evenly coated on all sides. Preheat oven to 350 degrees. Get out a heavy skillet, add a couple of inches of vegetable oil.  Heat oil to high or 400-450 degrees.  Add the chicken, do not crowd.  Sear the chicken on all sides until golden brown.  Remove from the skillet.  Put the chicken on a roasting pan and bake for 8-minutes. Add a slice of fontina cheese on top of each piece of chicken, bake for about 2-minutes or until the cheese melts. Remove from the oven. It’s now time to assemble your sandwich.  Grill your rolls in butter until lightly browned. Spinach, tomatoes, red onions, and spicy mayonnaise.
